Known as "The Queen of Table Waters," the European
imported Apollinaris has a long history dating back to the Roman
Empire as a "luxurious" mineral water, "after the
30-years war, the fine water became the 'in' drink at (the) courts"
of Europe. This "exquisite, delicate" water was often
served in refined circles, like the Corey's, as an alternative
to wine.
